“When it comes to fish, I keep things simple and seasonal, choosing the best day boat fish available and letting the quality speak for itself. The cooking is precise but uncomplicated. handled gently, finished cleanly, and paired with flavours that don’t overpower the fish.
That same approach runs through the rest of the menu. Dishes like the lamb rump are slowly braised for 16 hours in a range of aromatics, then seared to control and refine the final flavour profile, focusing on depth, texture and balance rather than technique for its own sake. Overall it’s food that’s thought through, balanced and honest.”
